  • 4 slices pork loin or tenderloin, each about 1/2-inch thick and 5 ounces
  • Salt and freshly ground black pepper

Warm, savory, and heavy, Chicken Congee is a rice porridge made with ginger and chicken stock and topped with chicken breast, one whole egg, chips, and soy sauce. 


  • 150g sushi rice
  • 2,500g liters chicken stock
  • Salt
  • Soy sauce, for serving
  • Thinly sliced spring onions or scallions, green parts only, for serving
  • Finely chopped fresh ginger, for serving

Pad thai (Thailand)

  • 5 Tablespoons light brown sugar
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon Sriracha hot sauce, or more depending on preference
  • 2 Tablespoons creamy peanut butter, optional
